All Cwmglyn Farmhouse Cheese is now made from the raw milk of their small but exceptional 4-cow Jersey herd, all living an indulged and stress free life grazing the mixed herb, organically managed pastures.
Each cheese is usually made from the milk of an individual cow and customers are surprised by the different flavour each cow presents. Both the milking and cheese making operations are carried out by Biddy Fraser-Davies, who is thus able to ensure the milk is of the highest quality.
The cheese is traditionally made, but with modern standards of hygiene, in the purpose built and fully MPI licensed cheese room from 25 to 50 litres of milk. It is then pressed for 2 or 3 days, sealed with our own clarified butter, and aged for several months in our temperature and humidity controlled maturing store, where it is wiped and turned until ready for sale.
